Default Broiled Tomatoes ~ Grilled Cheese Tomato Sandwiches

Broiled Tomatoes
Slice large tomatoes about 1/2 inch thick and place in an oven-proof, glass pan that's been lightly sprayed with cooking oil (Slice enough tomatoes to be able to reserve at least two slices per family member, depending on tomato size). Brush slices with 1 T olive oil. Sprinkle evenly over tomatoes, 1/2 cup parmesan cheese. Place under broiler and broil until cheese starts to brown and bubbles. Reserve leftovers for later in the week.

Grilled Cheese Tomato Sandwiches
Prepare sandwiches as normal, adding the reserved slices, and grill as usual.
