Leftover Roast Beef Salad
1 cup finely chopped roast beef
1/2 cup diced celery
1 green onion, minced
1/4 to 1/2 cup diced Cheddar, Swiss or Monterey Jack cheese
1/4 cup mayonnaise
2 tsp sweet pickle relish or 1 sm. dill pickle, finely chopped
1/2 tsp prepared horseradish
2 tbs catsup
1/4 tsp salt
pinch of pepper
Mix all ingredients together. Serve on lettuce leaf or as a sandwich.
Serves 2.

Mos I think you are just the most cleaver person I have seen when it comes to recipes. You really need to put together a cook book. I think you could be top 10. Thanks again for all your ideas

aw...shucks...t'weren't nothing... LOL! when your finances have been up and down as many times as mine have, you learn to get creative by experimenting. if it turns out well, then I keep the notes that I've made so as to be able to repeat! and I am writing a cookbook many of the recipes are already here...it may have to be a series...I'm old and have a lot of stuff! LOL!
