This is one of my husband's favorites on a cold night.
It's easy, cheap and only uses one pot!
1 lb ground beef (optional)
1 large onion (diced)
1 pkg. taco seasoning
1 pkg. dry ranch dressing mix
1 large can tomatoes (I like the petite diced)
1 regular can diced tomatoes
1 can Rotel (generic diced tomatoes with peppers just as good)
1 can corn
1 can chili beans
1 can red beans
1 can black beans
In a stock pot - If using meat brown it with the onions and the two packages of seasoning (do not add water).
If not using meat cook onions with the seasonings.
With out draining any of them add all of the cans to the pot.
Simmer for an hour or more and your done!
It makes enough for 6-8 servings depending on your serving size.
I like to top each bowl with a little cheese and a dab of sour cream.
