2 cups self-rising cornmeal
1/2 cup flour
3/4 cup sugar
2 cups buttermilk
4 slices bacon, cooked & crumbled (optional)
3 Tbs bacon drippings or vegetable oil
Mix all. Pour into greased 9x5x3 loaf pan. Bake at 350 degrees for 1 hour. This bread doesn't get very brown, so be sure not to overcook. It will pull away from the sides of the pan when its done. Freezes well.
Makes 1 loaf
