Amount Measure Ingredient -- Preparation Method

1 lb Fresh rhubarb, cut into
1-inch pieces
1/2 c Sugar

Add rhubarb to a saucepan with a small amount of
water and simmer for 5 minutes. Add sugar and simmer
for an additional 5 minutes or until sugar is
dissolved.
This is great in ice cream, with plain low-fat
yogurt, on pancakes, with custard or all by itself.

Stewed Rhubarb

Amount Measure Ingredient -- Preparation Method

Rhubarb -- diced
Pinch salt
sugar -- to taste

Put diced rhubarb in a pan with a little water, add salt and simmer until
rhubarb is cooked. Add sugar to taste and cool a little while longer until
thick.

Good with cracker and who knows what else.

Stewed Rhubarb
'Wonderful served as is, or as a topping for ice cream or pound cake'
3-1/2 cups chopped rhubarb, cut into 1-inch pieces (about 1 lb)
1/2 to 3/4 cup sugar
2 Tbsp honey
1 tsp lemon zest
2 Tbsp lemon juice
1/4 cup water

Combine all in a saucepan
Bring to a boil, cover and simmer 6 minutes
Uncover and simmer an additional 6 to 7 minutes or until thickens
Stir gently only once or twice so rhubarb doesn't lose it's shape
Makes about 4 cups
