Default Fettuccine with Smoked Salmon and Salmon Roe

I make this when I find the canned, smoked salmon and caviar in the discontinued products I'll buy all that I can squeeze out of my budget and stock the pantry. 50-cents a can or jar...I'll take that!
Fettuccine with Smoked Salmon and Salmon Roe
1 lg package fettuccine
4 tbs butter
1/2 lb smoked salmon (canned or 'fresh'), thinly sliced and cut into julienne strips
3 tbs brandy
2 tsp lemon zest
1 1/2 cups heavy cream
white pepper to taste
salt, to taste
4 tbs salmon roe
Warm the butter in a skillet over medium-low heat. Add the salmon, stirring well to coat it with the butter. Add the brandy, half the lemon zest, and the cream. Allow the alcohol to evaporate, about 3 minutes. Season with pepper and remove the sauce from the heat. Cook the fettuccine according to package directions. Drain, and transfer the pasta to the skillet with the sauce. Add the remaining lemon zest and toss the pasta and sauce together. Transfer the sauced pasta to individual serving plates. Top each one with a tbs of salmon caviar, then serve immediately. 4 servings = about 980 calories.
with all of these calories...serve salad on the side! LOL!
