had a painful day yesterday so last night i opened a jar of speg sauce (i normally make my own but had run out) cut up some meatballs i had in the freezer, used some fettucinni noodles i got on clearance from the store i had in the freezer and waaaaalaaaaaaa speghetti lol. IT was very good actually. I am going to make our speghetti with fettuchini noodles from now on. Both hubby and i had gastric bypass so pasta is hard for us. Normally i use wheat pasta but this was great
We like to make Onion soup mix noodles: Boil elbow noodles and drain, add 1 packet of dry onion soup, mix in 1-2 sticks of butter.
Normally have this as a side dish with pork chops or chicken, but we make way more than needed because we eat it for a day or two afterwards in our lunches or a quick meal at night. Love it ! We do not add any veggies to it, because we like the onion flavor.

On our "tight' days I usually make black eyed peas seasoned with seasoned salt and accent and make a head of cabbage to go with it. Even the biggest heads of cabbage are almost always under a dollar and a bag of Black eyed peas are 82 cents !!!

We also like cabbage soup made with a head of cabbage cans of kidney beans and cans of tomatoes in beef bullion broth. If you have more money to work with you can add onions and ground meat we like ground turkey !!!! You can add and take out items according to what you have and what your budget is !!!

Any kind of dried beans cooked and seasoned with rice or cabbage as a side is very low cost high flavor meal !!!
Home made corned beef hash is also very cheap just peel and cube about 5 pound of potatoes (depends on family size) and boil them until tender . When tender mash them with an old fashioned potatoe masher and add a can of corned beef !!! Waaalaaa you have homemade corned beef hash witch is so wonderful and by far better than canned !!!!

Peanut Butter is really so versitile and good quality protein. It often goes on sale 10 for $10 here, and I buy a dozen jars at a time. It's not just for sandwiches! One of my favorite meals is pasta in peanut sauce...
Peanut Sauce for pasta
1/2 cup peanut butter (roughly 25 cents from my $1 jar of peanut butter that holds about 2 cups of peanut butter)
1 cup of hot water (not technically free, but pretty dern close)
3 Tbsp soy sauce (pennies, bought on sale)
1 Tbsp honey or sugar (pennies)
a shake of garlic powder (from my 50 cent jar of $ store garlic powder...not even a penny)
pinch of ground ginger and white pepper (pennies)
Mix all ingredients. Toss with hot cooked pasta (bought on sale, of course!)and serve immediately. Great with green onion sliced finely on top, too.
I also will throw in pea pods, watercress, bean sprouts, and other veggies, sometimes
I can get this dinner on the table for under $2 total. I LOVE it when that happens!
I usually make a bunch of white rice, and cook up some frozen ground turkey (if I have it in my freezer) and then pour on whatever leftover sauce we have... usually some asian teriyaki sauce.
Another favorite is meatloaf if you have frozen ground beef/turkey available. I usually just add whatever is in the fridge: mayo, ketchup, soy sauce, worcesture sauce, lemon juice, spices, egg, milk, teriyaki sauce, bbq, mustard, ... It's a great way to get rid of all the sauces you have piling up But remember, just a little of each!

last nite i wasnt feeling good so i just threw together a few things, well i had already made homemade spegetti sauce , so i looked in freezer to see what else i had. i wanted something different.
Raviolis i had gotten on clearance at the store, meatballs ( i had gotten the same way), yellow squash i had from this summer i used my food saver to store longer.
i put some sauce in the bottom of the dish put in the raviolis, a few meatballs, sliced squash, more sauce , parm cheese, motz and stuck in the oven for 20 minutes, wallaaa dinner is served lol.
i purchased a bread machine last week at the thrift store for 12 bucks, i have been making all our bread with it, so easy and sooooooooo cheap so with dinner we had home made french bread.
I don't know how you get Tuna fish in there, but here in Portugal canned tuna fish is rather cheap, so is rice. One thing I used to make (it was my speciality ) was tuna rice.
Onion frying on olive oil, then add the rice, let is soak the oil, Then add the tuna, stir everything, and the add water and let simmer until rice is done. Very simple. I'm not sure about the quantities, but I believe half a can of tuna, one glass of water and half a glass of rice per person.
