Myself, I could live on potatoes and eggs. I make potato pancakes all
the time, just grate a potato or two, mix with a handful of flour and
some ground pepper and fry in a hot pan with cooking oil (about medium
heat). It's so golden and crispy, fatty but if you use something with
an omega oil in it then it's brain food!

We make taco soup either from leftover taco night or
1 lb hamburger or turkey meat
1 large can of tomatoes any kind
1 can whole corn
1 can ranch style beans or leftover beans
taco seasoning
make it like soup

Since we grow a lot of our food I am very seldom without green beans, corn, squash, zucchini, potatoes, onions, and frozen apples. That said I always keep a couple of cans of Salmon in the pantry for quick meals. My favorite bare bones meal is pinto beans (soup beans), cornbread, and potatoes. Then I take the leftovers and fix refried beans for burritos and taco the next night. Then if I still have leftovers I use the pinto beans with some veggies and Salm0n patties. I am one of those people who can eat the same thing for several days and not get tired of it. Of course, I love vegi nights. They are CHEAP and a way to eat healthier one or two nights a week.

A very simple budget meal for us is Creamy Vegetable Soup. I use a can
of cream soup - mushroom, chicken, celery, whatever I have. Add a can
of milk and the equivalent of one soup can (sometimes more) of frozen
mixed veggies, and salt and pepper. Serve with biscuits, grilled
cheese sandwiches, poured over toast, etc.

Budget Meals
Today I made a "Budget Meal" that was delicious and will make again often.
Broccoli/Cauliflower Soup
2 1/2 cups (more or less) of broccoli-cauliflower 'waste'
2 1/2 cups of chicken stock
1/4 cup butter
1/2 cup chopped onions
1/2 cup flour
3 cups milk
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 cup shredded cheese
Chop the waste of the broccoli-cauliflower and cooked it until tender. Then
melt the butter in a Dutch oven and saut? the chopped onions until tender.
Add the soup stock mixed with the flour. Add salt, pepper, garlic powder and milk. Simmer to mix flavors. Stir in cheese.

Just made this last night, had forgotten all about it:
Pasta Fagiole
1 jar spaghetti sauce
1 can navy beans (or equivalent in dry beans, soaked and cooked)
1/2 lb. uncooked pasta (any kind)
optional: julienned squash, frozen broccoli, etc.
optional: turkey sausage, sliced (about 1/2 lb), ground turkey or
beef (browned), shredded or cubed cooked chicken
In large pot, mix spaghetti sauce with equal amount water. Add
beans. Add meat if desired. Bring to boil. Add pasta (or, cook in
separate pot as the pasta can really thicken the soup the second
day, and add pasta to individual servings). Add veggies as desired.
Reduce to simmer, and cook for about 20 minutes. We always have
beans, pasta, and sauce on hand.
Makes 4-6 large servings.
Cost:
Sauce $1.32 (on sale)
beans $ .41 (on sale)
pasta $ .50 (on sale)
sausage $1.50 (on sale)
Total: $3.73 for 6 servings with turkey sausage, $2.23 without (more
like 5 servings)
Breakfast Foods of all sorts - someone else did a great job of
listing these
Tuna Casserole
Mom's old stand by, but in a pinch it's great.
1 can cream of mushroom soup
1 cup milk
1 can tuna, drained
1 regular size package egg noodles, slightly undercooked
1 can peas (or frozen equivalent)
optional: bread crumbs, fresh or canned mushrooms, an extra can of
tuna
Mix soup, milk, tuna, peas, and noodles together (with extras if
desired) Pour into greased casserole dish. Top with bread crumbs.
Bake in 350-375 preheated oven for 30 minutes.
Baked Potatoes - can "stuff" them with frozen veggies, leftover
meat, cheese, etc. for a complete meal
Quesadillas
Beans and Rice - Cheap with canned beans, DIRT cheap if you soak
your beans yourself. Add spices for flavor (there are some great mix
recipes on line). It's a complete protein, high in fiber, and low in
fat.
We keep a good stockpile of dry goods in our house, as you can see.
But it helps on the leaner weeks . . .

Or if you are like me and HATE mushrooms, I fix my tuna casserole with Cream of Chicken soup. I know, I know, chicken with tuna? But it is so good. I use 2 cans of soup for a real creamy casserole and load it with shredded cheddar cheese on top. I never tried the bread crunbs...I'll have to try it next time.

I use cream of celery soup in my tuna casserole......I heat the soup with
some milk & melt the cheddar in it, then add some mayo! creamy & YUMMY!!
