Heart Garlic and Cream Cheese Stuffed Salmon

If you can splurg once you should try this - it is delish!!!

2 4-ounce salmon fillets
2 cloves finely chopped fresh garlic
1/4 cup chopped green onions
2 tablespoons reduced-fat cream cheese
1/4 cup baby spinach
1/4 cup chopped button mushrooms
1 tablespoon extra virgin olive oil, Ground black pepper to taste

Cut 4-5 slits across each salmon fillet. Stuff them with garlic and green onions. Spread cream cheese across top, cover with spinach and mushrooms, and drizzle with olive oil. Sprinkle with pepper however much you like. Place in a shallow baking dish. Bake in a 400 degree oven for 15 to 20 minutes or until fish flakes easily when tested with a fork.

Garlic lovers can use even more garlic on each salmon fillet.
