Default Catfish Pecan

Catfish Pecan

1/2 cup Cornmeal
1 teaspoon Salt
1/4 teaspoon Pepper
2 (10 to 12 ounce each) pan dressed Catfish
3 Tablespoons Vegetable Oil
1/2 cup Pecans, finely chopped

Pecan Rice

Lemon Slices (optional)

Combine cornmeal, salt and pepper. Dredge the fish in the cornmeal mixture. Place coated fish in a lightly greased 13 x 9 x 2 inch baking pan; drizzle oil over the fish. Bake at 500 degrees F for 10 minutes. Sprinkle with pecans; bake another 5 minutes or until fish flakes easily with a fork. Transfer to a serving platter and serve over pecan rice. Garnish with lemon slices.

Pecan Rice

1/4 cup finely chopped Onion
2 Tablespoons Butter, melted
2 1/2 cups cooked Brown rice
1/2 cup Pecans, finely chopped
2 Tablespoons minced fresh Parsley
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon ground Ginger
1/4 teaspoon dried whole Basil

Saute onion in butter until tender. Stir in remaining ingredients; reduce heat and simmer until thoroughly heated.
