Almond Dijon Baked Chicken
2 skinless chicken breast fillets
1 tbs Dijon mustard
1 tbs mayonnaise
1/4 cup almonds, chopped
Preheat oven to 375°F. Place chicken in a lightly greased baking pan. Blend mustard and mayo together and spread on top of chicken. Top with almonds. Bake for 20-25 minutes, or until chicken is cooked. 2 servings = about 280 calories.
