Lemon Pepper Chicken with Cilantro Chicken Rice & Veggies
SO you either have to start out with a lemon pepper breast from Tyson or the like, or do it yourself. I got mine from Angel Food last month, so those of you who get that might find this helpful.
1 Boil in the Bag Rice (I use Uncle Ben's - You could use regular rice also)
Dime size bunch of Cilantro - Finely chopped
2 Lemon Pepper Chicken Breast (you could use regular also if you wanted)
1/2 cup chopped peppers (red, yellow, and green)
1/2 jalepeno pepper - finely chopped
1 teaspoon Smart Balance spread
Your choice cooking oil
Instead of Water for the recipe, use Chicken Broth. Boil the rice until done. Remove from water, drain excess water, and open bag into bowl or pan. Stir in butter. Add in Cilantro.
While rice is cooking, brown the chicken in a skillet, add in veggies. Drain any grease and mix in with rice. Enjoy!
