Chicken Gorgonzola Pasta
Toss hot cooked pasta with extra-virgin olive oil, shredded rotisserie chicken, diced tomatoes, chopped green onions, halved pitted Kalamata olives and crumbled Gorgonzola cheese.

Shredded Barbecue Chicken
Mix shredded rotisserie chicken with barbecue sauce. Pile it high in large buns and top with coleslaw. Or serve the chicken without the bun, and pile it on cornbread.

Chicken Pita Sandwich
Spread a pita pocket with hummus and stuff with shredded rotisserie chicken, diced tomatoes and diced cucumber. Mix plain yogurt with cumin, salt and pepper to taste. Drizzle the sauce over the filling.

Chicken to Go
Cut rotisserie chicken into serving pieces and pack in a cooler with purched spicy dipping sauce, honey-mustard dipping sauce, cucumber slices, potato salad and water melon slices.

Chicken Pizza
Spread Boboli pizza crust or other prepared crust with garlic-herb spreadable cheese. Sprinkle with chopped rotisserie chicken, sliced tomatoes, chopped olives, sliced onions and sliced green peppers. Top with shredded mozzarella cheese or sliced fresh mozzarella cheese. Broil just until cheese is melted.

Buy a rotisserie chicken and take it home and shred and/or cut up if planning to use the picnic recipe. Bag up portions and stick in the freezer, then pull out and defrost when ready to use in one of the recipes.
