Default Chili-Coconut Marinated Grilled Turkey Tenderloin

Chili-Coconut Marinated Grilled Turkey Tenderloin
Meat:
4 turkey breast tenderloins
Chili-Coconut Marinade:
1/2 small onion, chopped
2 tbs parsley
1 tbs ginger
3 garlic cloves
1 tsp lemon peel
1/4 to 1/2 tsp crushed red pepper
1/2 cup soy sauce
1/2 cup unsweetened coconut milk
3 tbs vegetable oil
1 tbs sugar
Place turkey in 13x9-in baking dish. In food processor, combine marinade ingredients until smooth. Pour mixture over turkey. coat evenly. cover with plastic wrap.l refrigerate at least 8 hours. Bring to room temperature before grilling. Heat grill. Lightly oil grill rack. Remove turkey from marinade. discard marinade. Place turkey on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 14 to 16 minutes or until turkey is no longer pink in center, but still juicy. Place on cutting board. cover with aluminum foil. Let stand 5 minutes. cut 1/2-in-thick diagonal slices. Garnish with parsley. 6 servings = about 225 calories.
