go ahead and buy that really cheap, tough cut of roast beef and then use this recipe...it tenderizes, adds moisture and great flavor!
Beef Marinated in Yogurt with Lemon and Pepper
2 large garlic cloves, minced
1/2 tsp salt
2 cups plain yougurt
1/4 cup lemon juice
pulp of 1 large lemon
1/2 tsp pepper
2-4 lb roast
In medium bowl, combine garlic, salt, yogurt, lemon juice, lemon pulp and pepper. Add roast to yogurt mixture. Turn to coat all sides. cover bowl tightly. Refrigerate at least overnight, turning once or twice. Remove roast from marinade. discard marinade. Place roast on gas grill over midium-high heat or on charcoal grill 4 to 6 inches from medium coals. cook 12 to 16 minutes on each side or until preferred doneness (medium to well done). Meat should be well browned but not burned. 6 servings = about 140 calories.
