Piggy Cheap Dinner Ideas

I am running out of ideas for cheap meals.


Here's a Frugal Frittata

* 6 large eggs (omit up to three yolks for low cholesterol version)
* 1/2 cup cheese
* 1/8 tsp. salt
* Leftover odds and ends (veggies, ham, beans, etc.)
* 1/4 tsp. Italian seasoning

Preparation:

1. Preheat broiler.
2. Combine eggs, cheese, and salt in a bowl.
3. Spray 9” skillet with cooking spray, and warm over medium heat. Add leftovers and cook until heated through.
4. Reduce to medium heat, and add egg mixture. Cook until almost set (approx. 3mins.).
5. Sprinkle with seasoning, and place in broiler until fully set (approx. 3mins).
6. Cut into wedges, and serve.

Here is a menu variety for three days to also help cut down on leftovers:

Make lots of meatballs then use them like this:

Spaghetti and meatballs

Meatball sub sandwiches

Then if there are still meatballs leftover I will blend them up and use them for a nacho bake.

This is a handy menu when you know that you are going to have one of those weeks that you would otherwise be lucky to have anything to eat because you need to keep running from one activity to the next.
