Ok, So I bought the Ball Blue book of Preserving and got a water bath canner.

I realized for the things I wanted to can, I needed a pressure canner, so I bought one on Saturday.

I have been sitting here looking at it.... almost scared to start. I REALLY REALLY want to... but what if I mess it up?

Im just a little nervous... but I may try and do the 4 pound of carrots I got for $1.99, this afternoon/evening.

Ill post how it turned out, when I have done it.

Oh please let us know how you did! Pressure canners can be a little scary but as long as you keep an eye on the pressure gage to keep the pressure where it needs to be and if you get distracted learn to turn it off will save you some grief. (I get a phone call and then totally forget what I'm doing-- of course I know no ones is that silly!

I DID it!!! I canned 3 quarts of carrots and 1 quart of fresh corn.

I will be posting pics in an album on my profile this evening.

It was time consuming but easy.
