Need to toot my own horn!

Ok I am so proud of myself and I must say I just love Budget 101!!!!!!
Last week I was making some homemade english muffins and I didn't have any cormeal. I sent my son on his bike to the store to pick some up and he brought me this huge box of white cornmeal. My english muffins were ok. A little heavy (somethings not right with my yeast) but they were fun to make and the kids liked them. I split them and keep them in the freezer. they are great for afternoon pizza snacks.
Back to tooting my own horn..... I was reading the back of the box and I wsaw a recipe for tamali pie. I haven't had this since I was a kid. I'm now down to no money but a stocked pantry and freezer so I made it tonight for dinner. I didn't have any enchilada sauce but I had a recipe for some. It was so easy!!! The kids and hubby loved it. My cornbread wasn't exactly the right consistency ( I think I let it sit too long on the stove) but my husband said it was one of my best experiments. I ( and my family consider me a great cook but they aren't always enthused with new recipies. This ones a keeper! It felt so good to have the ingredients on hand for a spur of the moment recipe. I love trying to be creative with what I have on hand.
Now if i could just plan it all out in advance the sound of my horn would blow so loud you'd need earplugs. I'm learning everyday thanks to the wonderful people here at butget101.

It sure is a great feeling when you find a good recipe and discover the you have all of the ingredients on hand. Glad it all worked out of you.
